Pour-Over Technique: The 3 Variables That Actually Change Your Cup

Same beans. Same grinder. Same water. So why does your pour-over taste different every time?

It's not your gear — it's your technique. Most people treat pour-over like filling a kettle: pour water in, wait, drink. But how you pour matters just as much as what you pour. Get these three variables right and your cup gets dramatically more consistent, no new equipment required.

Where Most Pour-Overs Go Wrong

The biggest mistake isn't grind size or bean freshness — it's pouring water straight through in one continuous stream. This over-extracts the center of the coffee bed while under-extracting the edges, and it skips a step that sets up everything else: the bloom.

The Three Variables That Matter

Once you understand what's actually happening in the filter, pour-over stops feeling like guesswork.

Bloom. Coffee releases CO₂ when it's fresh — pre-wetting the grounds and letting that gas escape before your main pour prevents uneven extraction later.

Pour pattern. A slow, center-out spiral keeps water moving evenly through the bed. Pouring near the edges of the filter causes water to channel down the sides instead of through the grounds.

Timing. Adding water in stages — rather than one long pour — keeps the coffee bed evenly saturated and gives you more control over total brew time.

A fourth variable, water temperature, ties it together: aim for 195–205°F depending on your roast level. Lighter roasts benefit from the higher end of that range; darker roasts extract well a bit cooler.

The 4-Step Method

  1. Bloom. Pour roughly twice the coffee's weight in water over the grounds, then wait 30–45 seconds. You should see the bed rise and bubble — that's the CO₂ escaping.

  2. First pour. In a slow spiral moving from the center outward, pour up to 60% of your total water. Avoid the outer edge of the filter.

  3. Pulse pours. Add the remaining water in 2–3 stages rather than one continuous stream, keeping the bed level as you go.

  4. Draw-down. Let the water fully drain through. Total brew time should land around 2:30–3:30 for most pour-over methods — faster and you're likely under-extracting; slower and you may be over-extracting or need a coarser grind.

A good starting ratio is 1:16 (coffee to water by weight) — adjust from there to taste.
